Scope of this Position |
 |
- Coordinate kitchen that typically is serviing several banquets at the same time, every day.
- Understand menu requirements of groups that are familiar with, and expect Four Diamond quality food, plating, and presentation.
- Position will be responsible for supervising/managing/overseeing the following departments: Main Kitchen, Banquet Kitchen
- In preparing for this position, candidate ideally will have worked in at least the following departments or positions: Sous Chef
- Requires a minimum of 2 year(s) of supervisory experience.
- Requires a minimum of 3-5 year(s) of experience.
- This position reports to: Executive Chef
- Must have experience at properties of similar size and quality.
- Position will be required to work a varied schedule that may include evenings, nights, and week-ends.

Job Requirements |
 |
- Must be a citizen of this country or possess a valid work permit.
- Have a passion for food but understand food production techniques necessary to serve Four Diamond meals for 100-1000 at a time. Comfortable preparing several banquets at the same time, every day.
- Know the importance of, and teach others consistency in food prep, plating, and presentation.
- Culinarians who can work closely with EC and with meeting planners to listen to what groups want and then exceed the group expectations while meeting the profit requirements of the hotel.
Technical Requirements:
- Thorough knowledge of food handling and preparation techniques.
- Ensure that level of quality, portion control, and plate presentation is adhered to consistently.
- Experience in production techniques of large banquets.
- Experience in multi-million dollar banquet operations.
- Inventory control skills.
- Ability to prepare a variety of cuisine's, using skill and creativity.
- Enjoy mingling with guests.
- Experience developing innovative banquet menus.
- Some purchasing experience helpful.
- Some experience in budgeting, food cost, labor costs, and scheduling helpful.
- Fill in for EC when necessary.
- Experience at 4-5 star level properties.
Managerial Requirements:
- Demonstrate team building experience.
- Demonstrate ability to lead by example.
- Solid career progression up through the ranks.
- Abilities to inspire, train, and develop people for promotion.
- Experience communicating, training, and managing multi-lingual staffs.
- Instill a guest service attitude in all employees.

- Strong technical skills.
- Excellent safety and sanitation skills.
- Create courteous, friendly, professional work environment.
